Well by now we have this down to an art. This is my 6th batch of beer. We have some what of an hierarchy develoved as shown below. We can brew bottle and transfur all at one time. This is a great hobby. The Dave's Dreaded American Bock will be a refreshing brew.

Content
6.8% Alcohol
1. Sterilized all Equipment used.
2. Started boil at 7:35PM with 7 gallons of water.
3. Added bag of grains at 7:40PM-
  • Dark Crystal Malt
  • Chocolate Malt
  • Biscuit Malt

Heat water with grain bag to 150° and keep under 170° for 20 minutes. Dipping the grain bag like a tea bag every so often.

4. Removed bag at 170°. 8:15PM
5. Hard boil achieved at 8:40PM. Added the following -

Amber Dry Malt Extract
Crystal Bittering Hops
Malto-Dextrin

6. 9:25PM - Added Irish Moss Clarifier
7. 9:26PM - Placed Wart Chiller in boil
8. 9:38PM - Added Strisselspalt hop pellets for aroma
9. 9:40PM - Finished boil removed head from wart.
10. Temperature is over 210°.
11. Cool wart down to 60° at 10:20PM
12. Rack liquid into the primary fermenter. Splashing the liquid to inject oxygen.
13. Pitch 2 packages of Dorch Ale Yeast (dry) at 10:30PM. Let settle into liquid.
14. Mix yeast into liquid at 10:30PM.
15. Take Original Gravity hydrometer reading 1.053
16. 10:40PM - Close lid on primary and place in the garage which is at 63° on the floor.
17. 03/12/97 1:00PM - Major activity in primary. Yeast crust has formed and the beer is working.
18. 03/16/97 2:00PM - Moved from primary to secondary. Beer looks good.
19. 03/27/97 9:30PM - Beer is still working in the secondary. Will check tomorrow to see of we can bottle later in the week.
20. 04/07/97 9:00PM - Beer is still working in the secondary. Should be ready in about a week to bottle.
21. 04/10/97 10:30PM - Hydrometer reading is 1.014. I think this will be bottled this 4/11/97.
22. 05/12/97 12:30PM - Beer is very good produced 50 bottles of beer. Beer Log Closed
