Dave's Dreaded European Lager

Dave's Dreaded European Lager is also referred to as a Continental Light or Pilsner. This fine all-malt style is typical of many quality German, Czech, Dutch, and Danish beers (many which of are not exported to the U.S.). Light gold in color, well-hopped but balanced with a rich malty aftertaste, full bodied with a clean dry finish, European Lageris always a pleasure. Well-carbonated with a rich, creamy head.

1. Sterilized all Equipment used.
2. Started boil at 1:41PM with ~6.5 gallons of water.
3. Added bag of grains at 1:41PM-
  • Crystal Malt

Heat water with grain bag to 150° and keep under 170° for 20 minutes. Dipping the grain bag like a tea bag every so often.

4. Removed bag at 168°. 2:26PM
5. Hard boil achieved at 2:53PM. Added the following -

Light Dry Malt Extract
Perle Bittering Hops

6. 3:38PM - Added Irish Moss Clarifier and placed Wart Chiller in boil.
7. 3:48PM - Added Saaz hop pellets for for finishing
8. 3:53PM - Finished boil removed head from wart.
9. Temperature is over 210°.
10. 4:30PM - Cool wart down to 65°
11. Rack liquid into the primary fermenter. Splashing the liquid to inject oxygen.
12. 4:45PM - Pitch 1 packages of Lager Yeast (dry) and let settle into liquid.
13. 4:50PM - Mix yeast into liquid
14. Take Original Gravity hydrometer reading 1.048
15. 4:55PM - Close lid on primary and place in the garage which is at 68° on the floor.
16. 4/10/97 10:30PM - The beer is ready to transfer to the secondary. We need to bottle so I will have a secondary to but this brew in.
17. Updated 05/12/97 12:30PM - Beer is almost ready to drink. This will be a good summer brew. Brewered 48 bottles.
