This is the second time around for Dave's Dreaded German Octoberfest.   I call this batch EXTRA because I added 1 pound of light dry malt extract.   This will give the beer more power and taste!! This will be a good beer!!!

1. Sterilized all Equipment used. 10/21/97
2. Started boil at 5:37PM with ~6.5 gallons of water.
3. Added bag of grains - Crystal Malt.
4. Tempature of water to 165° and steep grain for 15 minutes. 6:04PM - 6:19PM
5. Remove Grain bag at 167° at 6:26PM
6. Hard boil achieved at 6:44PM. Added the following -

Light Dry Malt Extracts (Plus 1 extra pound)
Amber Dry Malt Extracts
Hallertauer Bitters Hops

7. 7:29PM - Added Irish Moss clarifier.
8. 7:34PM - Added Hersbucker Hop Pellets for flavor.
9. 7:42PM - Added Tettnanger Hop Pellets for aroma.
10. 7:44PM - Finished boil remove wart from heat.
11. Temperature is 210 degrees.
12. Cool wart down to 78 degrees finished at 8:30PM
13. Rack liquid into the primary fermenter. Splashing the liquid to inject oxygen.
14. Take original hydrometer reading 1.044 add .003 due to temperature of wort is at 70 degrees. OG is 1.047.
15. Pitch 1 packages of Lager Yeast (dry) at 8:40PM. Let settle into liquid.
16. Mix yeast into liquid at 8:43PM.
17. 8:46PM - Close lid on primary and place in the garage which is at 60 degrees on the floor.
18. 10/26/97 3:00PM - Moved from primary to secondary
22. 11/24/97 2:00PM - Kegged beer and carbonated.
23. 12/30/97 840PM - Log closed.  This beer was very good and had alot of body.
