Dave's Dreaded Honey Cream Ale. This is our first time making this brew. It looks great and taste great. This beer will be kegged.

FG: Hydrometer reading is 1st - 1.008 2nd - 1.006 3rd - 1.004

1. Sterilized all Equipment used.
2. Started boil at 7:16PM with ~6.5 gallons of bottled water.
3. Added bag of grain at 7:16PM-
  • Victory (Biscuit) Malt

Heat water with grain bag to 165° and turned off head and steeped for 20 minutes. Water temp went down to 153°. Dipping the grain bag like a tea bag every so often.

4. Removed bag at 168°. 8:30PM
5. Hard boil achieved at 8:46PM. Added the following -

Light Dry Malt Extract
Northern Brewers Hops

6. 9:30PM - Added Irish Moss
7. 9:40PM - Added 40 oz Brewers Honey and Ultra Hop Pellets
8. 9:45PM - Finished Boil removed heat from wart.
9. 10:30PM - Start water in wart chiller
10. 10:40PM - Cool wart down to 78°
11. 10:41PM - Rack liquid into the primary fermenter. Splashing the liquid to inject oxygen.
12. 10:48PM - Pitch Ale Yeast 2 packages
13. 10:49PM - Mix yeast into liquid
14. 10:50PM - Take Original Gravity hydrometer reading 1.059
15. 11:00PM - Close lid on primary and place in the garage which is at 78° on the floor.
16. 08/12/97 7:00PM - Transferred from primary to secondary fermenter.
17. 08/26/97 10:30PM - Hydrometer reading is 1.008.
18. 08/27/97 8:00PM -Beer is very good kegged beer 5 gallons. Place in refrigerator cooled to 38° and place 30 pounds of Co2 pressure on the keg.
19. 08/28/97 8:10PM - Rolled keg around.
20. 10/27/97 8:00PM - Beer Log closed.
