This is a recipe Greg Foreman gave me to brew. If you want to lager in Texas this is the time to do it. This is a very , and I quote Greg Foreman, "Quaffable Beer"

FG: Hydrometer reading is 1st -  2nd -  3rd -

1. Sterilized all Equipment used.
2. Started boil at 1:40PM with 7 gallons of water.
3. Added bag of grains at 1:40PM-
  • 1 lb. crystal malt 10° Lovibond

Heat water with grain bag to 168° and steeped for 20 minutes. Dipping the grain bag like a tea bag every so often. 2:14PM to 2:34PM

4. Removed bag at 168°. 2:37PM
5. Hard boil achieved at 2:52PM. Added the following -
  • 6.6 lbs. Yellow Dog Liquid Malt Extract.
  • 0.5 oz.  Hallertaur Hops
6. 3:22PM 0.5 oz.  Hallertaur Hops
7. 3:37PM - Added 1 tsp. Irish Moss Clarifier and placed Wart Chiller in boil.
8. 3:49PM - 0.5 oz Tettnanger Hops
9. 3:52PM - Finished boil removed head from wart.
10. Temperature is over 210°.
11. Cool wart down to 64° at 4:50PM
12. 4:52PM - Rack liquid into the primary fermenter. Splashing the liquid to inject oxygen.
13. 4:55PM - Pitch liquid lager yeast -  Wyeast 2007 (pilsner). Let settle into liquid.
14. Mix yeast into liquid at 4:58PM.
15. Take Original Gravity hydrometer reading 1.043
16. 5:03PM - Close lid on primary
17. 12/30/97 3:00PM - Aeration of the wort with air for 5 minutes.
18. 1/2/97 5:00PM - Transferring the Old world Lager to the Secondary.
