Dave's Dreaded Pecan Pale Ale is our first experiment with adding different items to our brew. Pecans have a nice taste and I hope the same taste will be blended into the great taste of a pale ale. This was our Good Friday Brew.

Dave's Dreaded Pecan Pale Ale Beer Log -

5.6% Alcohol
1. Sterilized all Equipment used.
2. Started boil at 10:58AM with ~6.5 gallons of bottled water.
3. Added bag of grain at 10:58AM-
  • 1 lb Carapils Malt
  • 1 lb Chopped Pecans

Heat water with grain bag to 165° and turned off head and steeped for 20 minutes. Water temputre went down to 153°. Dipping the grain bag like a tea bag every so often.

4. Removed bag at 168°. 11:40AM
5. Hard boil achieved at 12:26PM. Added the following -

6 lbs Light Dry Malt Extract
1 oz Northern Brewers Hopps
1/4 cup Malto Dextrine

6. 1:12PM - Added 1/2 oz Cascade Hops and Irish Moss
7. 1:22PM - Added 1/2 oz Cascade Hops
8. 1:26PM - Finished Boil removed heat from wart.
9. 2:10PM - Cool wart down to 65°
10. 2:10PM - Remove Pecans from liquid.
11. 2:15PM - Rack liquid into the primary fermenter. Splashing the liquid to inject oxygen.
12. 2:25PM - Pitch Wyeast(1968) london esb (liquid).
13. 2:30PM - Mix yeast into liquid
14. 2:30PM - Take Original Gravity hydrometer reading 1.049
15. 2:35PM - Close lid on primary and place in the garage which is at 73° on the floor.
16. 04/02/97 6:00PM - Transferred from primary to secondary fermenter. Added 1/2 Cascade Hops into the brew. This is called DRY HOPPING.
17. 04/10/97 10:30PM - Hydrometer reading is 1.008. This would be a 5.6% Alcohol. We will be bottling very soon.
