This is a hoppy, flavorful, traditional American style.  It is brewed with lager yeast at ale temperatures.  This is the first brew of 1998 for Dave's Dreaded Microbrewery.

1. Sterilized all Equipment used.
2. 1/2/98 11:24PM - Started boil with 7 gallons of water.
3. Added bag of grains at 11:25PM-
  • 1 lb. crystal malt 10° Lovibond

Heat water with grain bag to 168° and steeped for 15 minutes. Dipping the grain bag like a tea bag every so often. 12:03PM to 12:18PM

4. Removed bag at 168° 12:37PM
5. Hard boil achieved at 12:58PM. Added the following -
  • Light Dry Malt Extract
  • Northern Brewer bittering hops
6. 1:43PM - Irish Moss Clarifier and placed Wart Chiller in boil.
7. 1:58PM - Finished boil removed head from wart. Temperature is over 210°.
8. 1:59PM - Added Cascade hops for finishing steep for 10 minutes
9. 2:09PM - Start to cool wart down.
10. 2:52PM - Cool wart down to 75°
11. 2:53PM - Rack liquid into the primary fermenter. Splashing the liquid to inject oxygen.
12. 3:03PM - Pitch liquid lager yeast. Let settle into liquid.
13. 3:05PM - Mix yeast into liquid at 4:58PM.
14. 3:06PM - Take Original Gravity hydrometer reading 1.035 plus .02 for temp diff. 1.038 OG.
15. 3:10PM - Aeration of the wort with air for 15 minutes.
16. 3:25PM - Close lid on primary
17. 1/7/97 6:00PM - Dave's Dreaded California Common Beer is transferred into the secondary. The beer has nice color and aroma.
18. 4/26/98 - log closed
