Now I have a beer freezer with temp control.  So it is time to brew an Octoberfest!!This is a lager beer and must be fermented at cooler temperatures.  It may take a while to complete but it will be worth the wait.

Weyermann Pilsner Malt 12 lbs

1. 12/29/98
8:28AM - Heat 8 gallons of strike water to 160º
2. 9:20AM - Mash in grain and temp level to 154º
3. 11:00AM - Start Mash out process.
4 11:23AM - Mash out completed bring temp to 168º and hold it for 5 minutes.
5. 11:30AM - Begin the Sparge process with 14 gallons of 175º water.
6. 12:50PM - Complete sparge and collect 13 gallons of sweet wort. Begin Boil.
7. 1:45PM - 90 min boil.  Achieve boil and add hops.
8. 3:15PM - Flame out and rest for 30 minutes.
9. 3:45PM - Begin cool down process and transfer to the primary fermenters.
10. 5:40PM - Complete cool down process and areate wort.
11. 546PM - Pitch Wyeast 2206 Bavarian yeast slurry in to the primary fermenters.   Place in the beer freezer and cold temp at 55º.
