This is the third brew of 1998 for Dave's Dreaded Microbrewery.   Brian wanted to do a "Sierra Navada" Clone.  So we did!!!

Content
 
1. Sterilized all Equipment used.
2. 4/25/98 12:30PM - Started boil with ~6.5 gallons of water.
3. Added bag of grains at 12:30PM-
  • 1/2 lb. Cara-pils
  • 1/2 lb. Caramel

Heat water with grain bag to 168° and steeped for 15 minutes. Dipping the grain bag like a tea bag every so often. 1:02PM to 1:17PM

4. Removed bag at 168° 1:20PM
5. Hard boil achieved at 1:35PM. Added the following -
  • 6 lbs Light Malt Extract
  • 1 oz. Perels bittering hops (~6.7% AAU)
6. 2:20PM - 1 tsp. Irish Moss Clarifier and placed Wart Chiller in boil.
7. 2:20PM - 1/2 oz. Cascade Hops (15 min left in boil)
8. 2:30PM - 1/2 oz. Cascade Hops (5 min left in boil)
9. 2:35PM - Finished boil removed head from wart. Temperature is over 210°.
10. 2:35PM - Start to cool wart down.
11. 3:00PM - Cool wart down to 75°
12. 3:05PM - Rack liquid into the primary fermenter. Splashing the liquid to inject oxygen.
13. 3:10PM - Pitch liquid Wyeast American 1056 into liquid.
14. 3:11PM - Mix yeast into liquid.
15. 3:12PM - Take Original Gravity hydrometer reading 1.048 OG.
16. 3:20PM - Aeration of the wort with air for 15 minutes.
17. 3:25PM - Close lid on primary
18. 4/29/98 5:30PM -Still Active in the Primary.........
19. 5/2/98 10:00AM - Transfured into the secondary.  Gravity is at 1.008.
20. 5/25/98 - Bottled 45 bottles log closed
