This is the second brew of 1998 for Dave's Dreaded Microbrewery.   The Scottish Ale will be like a "McEwan's".  We are looking foward to drinking this beer!!!

1. Sterilized all Equipment used.
2. 4/25/98 11:50AM - Started boil with ~6.5 gallons of water.
3. Added bag of grains at 11:50AM-
  • 1 lb. crystal malt 60° Lovibond
  • 1/2 lb. Chocolate malt

Heat water with grain bag to 168° and steeped for 15 minutes. Dipping the grain bag like a tea bag every so often. 12:36PM to 12:51PM

4. Removed bag at 168° 1:17PM
5. Hard boil achieved at 1:27PM. Added the following -
  • 6 lbs Amber Dry Malt Extract
  • 2 oz. Fuggles bittering hops (~3.5% AAU)
  • 1 lb dark brown sugar
  • 1/2 teaspoon Burton Salts
6. 2:12PM - 1 tsp. Irish Moss Clarifier and placed Wart Chiller in boil.
7. 2:27PM - Finished boil removed head from wart. Temperature is over 210°.
8. 2:28PM - Start to cool wart down.
9. 3:00PM - Cool wart down to 75°
10. 3:05PM - Rack liquid into the primary fermenter. Splashing the liquid to inject oxygen.
11. 3:10PM - Pitch liquid Wyeast Scottish into liquid.
12. 3:11PM - Mix yeast into liquid.
13. 3:12PM - Take Original Gravity hydrometer reading 1.068 OG.
14. 3:20PM - Aeration of the wort with air for 15 minutes.
15. 3:25PM - Close lid on primary
16. 4/29/98 5:30PM - Still active in the primary.
17. 5/2/98 10:00AM - Transfured into the secondary.  Gravity was at 1.020.
18. 5/25/98 - bottled 45 bottles log closed
