This is the second brew of 1998 for Dave's Dreaded Microbrewery.   The Scottish Ale will be like a "McEwan's".  We are looking foward to drinking this beer!!!

1. Sterilized all Equipment used.
2. 4/28/98 5:54PM - Started boil with ~6.5 gallons of water.  This was at 45 minute boil.
3. Added bag of grains at 11:50AM-
  • 1 lb. cracked wheat

Heat water with grain bag to 160° and steeped for 15 minutes. Dipping the grain bag like a tea bag every so often. 6:15PM to 6:30PM

4. Removed bag at 168° 6:38PM
5. Hard boil achieved at 6:48PM. Added the following -
  • 3 lbs Light Dry Malt Extract
  • 3 lbs Dry Malted Wheat Extract
  • 1 oz. Hallertauer bittering hops

(We changed the recipe alittle.  The recipe called for 3.5 lbs of Wheat Extract and 2 lbs of Light DME. We did the above.)

6. 7:28PM - Added Saaz finishing Hops 1/4 oz.
7. 7:33PM - Finished boil removed head from wart. Temperature is over 210°.
8. 7:34PM - Start to cool wart down.
9. 8:15PM - Cool wart down to 75°
10. 8::16PM - Rack liquid into the primary fermenter. Splashing the liquid to inject oxygen.
11. 8:22PM - Pitch liquid Bavarian Wyeast 3056.
12. 8:23PM - Mix yeast into liquid.
13. 8:24PM - Take Original Gravity hydrometer reading 1.044 OG
14. 8:25PM - Aeration of the wort with air for 15 minutes.
15. 8:40PM - Close lid on primary
16. 5/3/98 4:30PM - transfured into the secondary. Gravity is at 1.014.
17. 5/25/98 - bottled 45 bottles of beer.   Log closed
